An old classic...with a new 'do...


WATERGATE SALAD

A beautiful, light salad that is incredibly popular in home-town cooking. I'm sure you've seen it in every church/community fundraiser cookbook EVER written! And it is wonderful.

It's easy to put together and is great to take to pot-lucks, picnics or bar-b-ques. The pudding flavor can be varied to suit your mood, but pistachio is the traditional one.

(I updated it with the added lime. Such a chef I am!)

One 4-serving size package regular or sugar free instant Pistachio pudding powder
One 8-ounce can crushed pineapple, undrained
One 16-ounce container small curd cottage cheese
One 8-ounce container Cool Whip, thawed OR 3 cups sweetened whipped cream
Juice and zest of one large lime
3-4 drops green food coloring, if desired

In a large bowl, combined the pudding mix, pineapple, and cottage cheese and mix thoroughly. Fold in the Cool Whip or whipped cream, lime juice and zest, and the food coloring if using. Cover and chill for at least one hour.

Makes 10 servings.
