Banana + Chocolate = well...let's just say it's FAB!




BANANA CHOCOLATE CHUNK BARS

Oh, gosh these are good!

Quick to throw together and good right out of the oven, but even better if they sit overnight. I love that they make a big pan and they are great for lunch boxes, picnics, sharing, or hoarding all to yourself.

They are called Banana-CHIP bars, but I like the bigger chunks you get when you chop your own chocolate. Use whatever...just MAKE THEM!

adapted from 201 Brownies and Bars

2 cups flour
2 teaspoons baking powder
1/4 teaspoon salt
3/4 cup butter
1 cup sugar
1/4 cup packed brown sugar
1 large egg
1 teaspoon vanilla
1 cup mashed, very ripe bananas
1-2 cups chopped semi-sweet chocolate

Preheat oven to 350 degrees. Coat a 9x13 inch baking pan with vegetable cooking spray and set aside.

In a small bowl combine the flour, baking powder, and salt. In a large bowl cream the butter with the sugar and brown sugar. Beat in the egg and vanilla. Beat in the bananas. Stir in the flour mixture just until moistened, and fold in the chocolate.

Bake for 25 minutes or until a tester comes out with moist crumbs attached. Allow to cool in for 10 minutes before cutting. Makes 15 bars.
